Carrot Muffin with Cream Cheese Frosting


We had a good Easter here at home and at our church. I had fun watching our daughters do the egg hunt..they are both kind-hearted that they did not fight on how much egg does one must get. They actually helped each other! Watching their excitement as they open each egg is a sweet moment. Here's what we did during that week and what we had filled their baskets and eggs: Easter For Kids

I made these muffins for our Easter lunch. Had it for breakfast and dessert. You can have this any time of the day... I know I can.




Ingredients:

Muffins:
2 cups grated carrots
4 large eggs
2 cups all-purpose flour
1 tsp vanilla
1 tsp salt
2 1/2 tsp cinnamon
1 1/2 cups sugar
2 tsp baking soda
1 1/4 cups oil

Cream Cheese Frosting :

1 8 oz Cream Cheese, softened.
1/4 cup butter, softened
1/2 tsp vanilla
1 cup powdered sugar

Directions :


Preheat oven to 310 F. Prepare all of your ingredients and line your muffin tin with liners.


In a large bowl , mix the sugar and oil together. One at a time, add the eggs.


In a separate bowl, mix the flour, baking soda, salt, and cinnamon.


Add the flour mixture to the sugar-oil mixture. Stir until just blended. Do not over mix. Fold in carrots.


Pour the batter into your lined or greased muffin tins. Bake for 20 minutes, use the toothpick method to see if the center is well baked. If it did not come out clean, bake for another 2 minutes.


Let it cool. Meanwhile, start making your frosting.


In a bowl, beat your cream cheese with softened butter until smooth. Add in vanilla, then the icing sugar one third at a time until it is smooth.



Spread the frosting on top of your muffins.



or pipe it nicely .. adding some cute sprinkles or toppers.
